Today was 14th of the month! It was Green Valentine's Day and also our 3 & 1/2 anniversary!
I baked New York cheesecake today. There's no time to pass it to him, so he can see it on Facebook only.

This is a New York Cheesecake without sour cream and lemon. However, I think should add some lemon into it next time. The original recipe is from Winnie's Kitchen Works. I changed a little bit because I had 250g cream cheese and some leftover digestive biscuit only.

【New York Cheesecake】










Ingredient:

(Crust)
Unsalted butter - 20g
Digestive biscuit - 40g

(Cheese paste)
Cream cheese - 250g
Caster sugar - 10g
Egg yolk - 2 pcs
Whipping cream - 30g
Cake flour - 20g
Unsalted butter - 20g

(Meringue)
Egg white - 2 pcs
Caster sugar - 35g


Method:
1. Crush digestive biscuit, add melted butter into it. Mix well and press it well into the bottom of cake mold until well compacted. Put it into fridge.

2. Cut the cheese into small pieces, add in caster sugar, beat it until creamy by using mixer.

3. Add in egg yolk, whipping cream, sieved flour and melted butter into the mixture accordingly. *Mix well before adding next ingredient. (You can add in 1 tsp lemon juice and 1/2 tsp lemon zest in this step)

4. Put egg white into a clean bowl. Use mixer to beat the egg white until bubbles appear. Divide sugar into 3 parts and add it into the egg white. Beat for few minutes after adding sugar each time. Beat it until stiff.

5. Mix 1/3 of meringue with cheese paste by using fold-in method. Pour it back to remaining meringue. Mix well again by using fold-in method.

6. Take the crust out from the fridge. Pour the mixture into the mold with crust. 
7. Heat it with 170C for 45 minutes. Freeze it for at least 3 hours after it cool.
